
Mocha cheesecake
Prep time 30 minutes
Serves 12
Ingredients
390 grams of sweetened condensed milk
500 grams of cream cheese
500 ml whipped cream
2 tbsp Nescafe (mixed with 3 tpsp water)
45 ml water
For the base 125 g biscuits
40 gms butter
Method
Mix the crushed biscuits with the butter and
press into the base of the tray.
Dissolve the gelatin with a little hot water.
Beat the cream cheese and condensed mlk.
Fold in the lightly beaten whipped cream.
Finally, add the gelatin and mix.
Pour the mixture onto the biscuit base in the
tray and freeze till the mixture sets.

Healthy banana mini muffins
You only need ripe bananas, yoghurt and flour to bake these 30 minute mini banana muffins. They are low fat and no added sugar, making them perfect for kid-friendly
lunch box treat or as a healthy snack.
INGREDIENTS:
2 Medium bananas , mashed .
180g(2/3cup) thick and creamy Vanilla yoghurt.
150g (1 cup) self-raising flour
STEP 1: Preheat oven to 180c/160c fan assisted. Grease a 24 hole mini muffin tray.
STEP 2: Combine yoghurt and banana in
a large bowl. Gradually stir in flour until
just combined.
STEP 3: Spoon the mixture into muffin
cases/tray and bake for 15 minutes or
until a skewer inserted into the centre
comes out clean. Set aside to cool and have as a snack or lunch box treat!
Mango and banana smoothie
Ingredients
1 medium ripe mango,
1 ripe banana,
500ml orange juice,
4 ice cubes.
METHOD
Cut the mango down either side of the flat stone, then peel and cut theflesh into cubes. Peel and chop the banana.
Put all the ingredients into a food processor or a blender, then process until smooth and thick. Keep in the fridge and use on the day you make it.
For an even quicker smoothie simply replace the fresh mango with 250g / 90z frozen or mixed tropical fruit available in most supermarkets. Frozen berries will also work brilliantly!
Dried fruit energy balls
Give your energy levels a real boost with these nutritionally balanced healthy fruit bites!
INGREDIENTS:
50g soft dried apricot
100g soft dried dates
50g dries cherries
2 tsp coconut oil
1 tbsp toasted sesame seeds
METHOD
STEP 1: Whizz apricots with dates and cherries in a food processor until finely chopped.
Tip into a bowl and use your hands to work in coconut oil. Shape the mix into walnut size balls, then roll in sesame seeds.
Store in an air tight container until you need a quick energy fix!!
